Would you recommend pitching thus brett with another yeast and not aerating to 'stress' the yeast? Really looking to get some funk in the nose along with the hops ala Evil Twin Femme Fatale.
I have a starter of amalgamation going right now for a Brett IPA I'm going to brew this weekend and from your description it sounds like its all fruit do you get any funk from this yeast, cause the starter is throwing some serious barnyard right now! Also how long did you let this ferment...
