    Speidel Fermenters

The silicone tubing I use fits over the standard spigot and perfectly on the bottling wand. I use a stainless wand.

    Speidel Fermenters

I have been using this fermenter for about 7 years now. I do bottle directly from it with no issues.

Off flavors...but used ale yeast this time

W34/70 is not an ale yeast. It is a lager yeast and would like lower temps than you are fermenting at. Perhaps this is a cause.

Did you not do any yeast nutrient feedings every other day? That is key because the yeast get lazy just fermenting sugar. They need nutrients to keep going and finish.

Sour … what do I keep doing wrong?

And be aware that cleaning and sanitizing are tow different things. Star-San is a a sanitizer. PBW or an alkaline brewers wash are cleaners. Clean, then sanitize.

    Need some quick help

If it is pre-boil then most likely hops had not been added yet. So bitterness should not be a factor. Sorry. I did not read all post before responding. Carry on.

Ph not changing at all from mash PH?

Would that sample need to be degassed before taking? I don’t have a Hanna meter so I don’t know how large or small your sample is.
