    Welcome to HBT. All good advice above. You also may want to try a different fermenter like a fermonster I believe that will keep the trub near the middle so less trub into your bottling bucket

    US-05 yeast seems to be stuck at 70% attenuation

    64 degrees is the low end recommended on the package. I would bump it up a little. I have a cream ale fermenting right now at 70 degrees for a week and is probably close to finished.

    I also live in Wisconsin. I've ordered grain twice from Bobby at brew hardware. His prices are good, has a good selection. Shipping was about $18.00 but it evens out with his grain prices being lower than NB. I will give rite brew a try if they have everything I need. They also have local pickup...

    Yeast starter for pressure lager (~68 F ferm)

    I have done 3 lagers pressure fermenting at 64 degrees 12 psi. I just pitch one pack of yeast no starter, no rehydration and it worked fine. All beers came out good

    Dos Equis Amber is also a vienna lager I think Negra Modelo leans more towards a Munich Dunkel

    You might try lallemand diamond lager yeast. I pressure fermented a Munich Dunkel with it and was very happy with it

    Thanks for the info about the batteries. I mixed up the buffer solutions and keep it in sealed jars for calibration. You are correct it's fine for brewing

    I would stay away from this PH meter. It looks just like an INKBIRD one that I have. The meter itself is ok, but the battery doesn't seem to last very long and I'm not sure I can find a replacement for it. Also the calibration solutions you have to mix up instead of purchasing premixed.

    Lalbrew Diamond Lager

    I made a Munich Dunkel and an Octoberfest with that yeast. I pressure fermented in a corny keg 12 psi at about 64 degrees. Both beers came out good

    I used weyerman barke vienna in my Octoberfest and it was delicious. Would definitely use it again

    False bottom height?

    I use the brew hardware version. The height is adjustable bt using different length SS bolts. Works great
