If I lived in USA instead of an igloo in Caada I would order one to play with. Shipping across vorder is a turkey I guess from dog sled elivery charges!
I plan to find out using their lab to test results of trying to set up a homebrew method that is a good roadmap. I am also going to see if I can test their commercial yeast for evaluation/taste. This will be my 53 rd year brewing so not my first rodeo!
Thanks for everyone's input. I want to try some new yeast products soon developed my way ( Canada) from Escarpment labs called NAY (ABV=.3%)( maltose-negative yeast for commercial brewers) and it is non-phenolic and non-diastatic. They have HYdra yeast for home brewers ABV + 1.3%

I carb my stout taps kegs at 7 psi CO2 and serve at 12-18 psi and get perfect pours at 38 F. To each their own! I get the cascade and it tastes great! Yes I use beer gas 70/30
I am now ready to keg this recipe again. Number 50 in the keg department so far this year! Killer recipe. I like the Makers Mark idea but don't want to play with such a great beer!

I brewed this one in 2020 when we had lock down and pubs closed. Hands down a winner! So balanced.... so good. It is on my brew list again. I have made 37 kegs so far since late March. This recipe is worthy of two kegs for sure. A real keeper that should be in a "tried and true" brew category!
If you can age this beer it just gets better! I am the one adding honey malt to the recipe. I think I will give the original a go for two kegs and make more notes. It is a keeper and crowd pleaser.
Thanks so much for updating your brewing experiment. We do not see agave in this part of Canada so I perked up when I saw you do this take on enhancing it!
It sure has been popular here and will go into at least two or three more kegs this year. Since late March i am on keg 20 for the year so...
