Picked up the ingredients for this today. I'm going to use the Belle Saison yeast, only Saison yeast the store had. Hops will be Zythos and Hallertauer, they didn't have Sorachi Ace, so I figured I'd just change both hops. Might use local honey as well. Here's to brewing my first Saison.

Dry hopped with 1oz 6.2% cascade for about a week. LHBS was out of centennials. Gravity at racking to secondary is 1.004, giving me about 4.7% ABV. It is fairly bitter, but not as bad as I feared. I'll know more in a few weeks after bottle conditioning. I might name this one Happy Accident..

Dry Hopping isn't a bad idea. This might just be a session IPA...haha.
