This may be better suited in a different forum but anyway. As this was my first 5 gallon kit I didn't catch the spice pack notes at first too. Look under the brew day schedule on the right side of the directions. It should be part of you hop/ boil schedule. Looks like 40 minutes into the boil.
I use a bazooka screen in my rectangular cooler and batch spare. The length should not be an issue( I tilt my cooler so my dead space is next to nothing). My only issue is that no matter how much I vorlauf I still get some grain getting past. I use a funnel with a fine screen to drain into BK...
