    I'd say if you want to make the cream ale then go for it without the rice. Just add some regular table sugar to get the same amount of dryness. I don't feel that rice really lends much flavor in a cream ale, it's mostly the corn that is the star. Good luck!

    Fruit Beer Watermelon Wheat

    Such a hit at the co-ed baby shower/ bbq we had the other day. Girls loved it, guys loved it... great beer. Upped the watermelon to 10 cups and it is still flavourful after 6 weeks in the keg.

    Here's my latest. 3rd time brewing this. 6# 2 row, 2# corn, 2# rice. Magnum to bitter. After 3 weeks in keg taste 100% better than after 1st week. Nevrr had a beer mellow so much, so fast. What was an ok beer turned into one I am really proud of and will continue to brew as is.
