I have been using various different online water calculators and usually ending up with 11 to 12 gallons wort with my 10 gallon batches.
I assume this is why I am ending up with lower than intended original gravity, as there is a higher ratio of water to ingredients.
Is there a reason...

There is nothing wrong with using fixtures with higher ratings other than they are more expensive. You can also use a smaller rated plug that would not require splicing. A 20a, 240v outlet is designed for a maximum of 4800 watts. If you are using 20a at 120v, you are only using 2400w and will...
