My German's pretty rusty but flipping through my copy of the Reinheitsgebot just now, it looks like there's something about going gebearden un der brewday. Looks like the beard and brewing thing, it goes waaaaaay back.

A bit of both.I'll brew variations of the same style five times, then move on to another style. There's too many intriguing styles out there to get stuck on one too long. Eventually I think I'll home in on five or six beers until I nail versions I like.

Right now I'm not ruling anything out. I'm in an area that's just now opening up to craft beers. Many of the styles I've never tried. So far, I've never met a beer I didn't like. Some, just from the sound of them, I'd approach a little carefully, but it's an education. I thought I'd hate IPAs...

I figured I'd stop at 2 oz. this batch, but, what the hey. More hops can't be a bad thing, right? I like these names.

Another misbelief shot to perdition:) Thanks! And yes, I'm dry hopping with another couple of ounces of Citra, but I'll bet you're right. I blew it on late addition flavoring....

So, I brewed an IPA yesterday, my first using a lot of Citra, 6 oz. in the last 15 minutes. I let the pot sit for 15 minutes to let the last 2 ounces of Citra steep, then turned on the immersion chiller. I walked away for a couple of minutes and returned to find one of the hoses had come loose...
