Green Flash is already pretty widely distributed. I can't say for sure if they're nation-wide, but we've been getting their beer in NC for many years. Since they bought Alpine we get that too. Score.

Just chiming in to say that JaDeD makes great chillers. I have the (apparently now discontinued) Hornet and it's a great piece of equipment. Fast and efficient. This is a hell of an offer they're making so I hope folks are able to take advantage. You won't regret it if you do.

I'd recommend buying the 10gal mash tun man. There's a pretty good chance you'll want the extra volume eventually - probably sooner than later.

OP - it sounds like your question is geared a bit more toward efficiency, but in the event you are researching kettle size with regard to a potential purchase I'd recommend going bigger. For 3gal of finished beer using the BIAB method I would want a 10gal kettle. This gives you plenty of room...
I've found that the best way to make good IPA is to make a bunch of batches of IPA and take really good brewing/tasting notes on each one. Experiment with all the tools/techniques available (dry/whirlpool/water adjustment/grains/etc.), but try not to change too many variables from batch batch...
