Hey Guys...I have brewed many ale extract kits but attempting my first lager yikes! I have a temp controlled frig. With ales I can ice it down to 75 or so and pitch ale yeast which is also at that temp.

I just checked my blow off jar in my frig on the kolsch...it is all brown and has yeast sediment in the bottom! Must have been an active yeast process.

Update on my Kolsch. I pitched the yeast the next morning with wort and yeast at 68. Next morning good bubble activity in my blow off jar, and on day 2 bubbling smooth and steady. At least i know that the yeast is active. Boy you were right about Kolsch it is very active!

I am brewing a Cali Common True Brew Extract kit. The lean instructions just say steep grains for 30min and boil for only 20-30 min after that.
My question is most here that talk about the Cali says to boil for 60 minutes but i have read that boiling too long will mess up my brew too...
The potassium metabisulfate i have is in powder form so a pinch i can do. I start my brews with 2-2.5 gal of water usually so half a pinch when heating up my initial brew water in all recipies is a could practice?
