    Closed-system pressurized fermentation technique!

I made a few slight changes to the process outlined above, but I have to say this has been a great success. I will definitely be brewing my 10 gallon batches under pressure moving forward. I am still 11 days away from the beer needing to be served, but it is tasting great right now. The...

Tucson, AZ Oktoberfest and Hombrew Challenge October 22, 2011

Just wanted to give this event a bump. I will have six beers on tap at this event and they are 6 of my best beers to date. I will be serving a Munich Helles, Oktoberfest, Oatmeal Stout, American Amber, English IPA, and American Wheat. It is going to be hard to give all of this beer away. It...

    Brewing Classic Styles Recipes

Awesome Job Wort. I own and have brewed several beers from BCS. I have also used several recipes as a starting point in formulating my own recipes. If you don't own this book, you should definitely buy it. I will take a look at the recipes you have posted and let you know if I find any...

    Most underrated beer

I am a big fan of Sam Adams Noble Pils and their Oktoberfest, both underrated. Kona Longboard Island Lager is a very good American Pale Lager. Most well crafted lagers receive very little attention. Sierra Nevada's Summerfest, Torpedo, and Tumbler are great beers that don't get the beer snob hype.

    Closed-system pressurized fermentation technique!

Thanks for the replies and wortmonger thanks for starting this great thread, tons of great information here. I still have not managed to read it all. After 36 hours I am seeing pressure build up in the system. Just needed a little more patience on my side. I will let you know how the batch...

    Closed-system pressurized fermentation technique!

I am doing my first pressurized fermentation and first fermentation in a sanke keg. I pitched my yeast yesterday afternoon and have not had any pressure build up yet (24 hours). I brewed 11 gallons of a Munich Helles with an OG of 1.052. I cooled the wort to 48 F. I oxygenated the wort with...

    Jaybird's Stainless False Bottoms

The brew went very well. I had around 20 pounds of grain in my keg mash tun and I had no issues with a stuck sparge. Just to experiment I opened up my march pump all the way for a few minutes while recirculating. I probably could have left it wide open the whole time, no slow down at all...
