You might try the Lallemand CBC-1. That's supposed to be able to re-ferment to 12-14%. I haven't tried it that high yet, but I have successfully used it for carbonating pseudo-cask-style in kegs.

I don't buy in the bulk Yooper does, but I always make sure I have Cascade and Citra on hand. I love me some Citra in a saison.
I'm curious, how long did you leave it in the fermentor before bottling? I recently added some 644 to a saison thatdidn't dry out the way I planned, and I am wondering if I should let it bulk-age in the fermentor for a while, as with sours?
