I think this method would create the perfect balance between the fruit and beer, but depending on the amount of water you steeped with i would be inclined to add it to the fermenter. Throwing it into the boil will kill off some of the characteristics of the fruit, but you might need to boil off...
I think either style would work but the flavors will be more pronounced in the saison. I imagine in the porter some of the fruit could get lost behind the darker malts but still worth brewing IMO.
