    I think this method would create the perfect balance between the fruit and beer, but depending on the amount of water you steeped with i would be inclined to add it to the fermenter.     I think either style would work but the flavors will be more pronounced in the saison. I imagine in the porter some of the fruit could get lost behind the darker malts but still worth brewing IMO. Let us know how it turns out!
