    Malt Bill for NEIPAs

    You can use any base malt, pilsner 2 row, etc. Flaked grains (Oats, Wheat, Barley) are usually used anywhere from 5% to 15% of the bill. Wheat isn't necessary but is used to improve mouthfeel and flavor. Usually used from 10% to 25%.

    Offtopic: Can you do this without transferring to another keg? Why couldn't you carbonate while crashing in the keg? Does sediment at the bottom of the keg impact flavor on the beer if undisturbed?

    How about oxidation? Maybe your palate has changed and you are now picking up what you thought was fine before? NE IPAs are very sensitive to oxidation. Do you cold crash? How do you transfer to the keg? Basically, the NE IPAs should never see oxygen AT ALL! But you probably already know this

    Thanks rhys333! So in theory, could i gather 5 gallons of tap water, add 0.75ml/gallon of lactic acid to bring the mash water to 5.4 pH and measure/adjust before heating everything up. Then add the pale grains to mash. Then skip the sparging and start the boil directly. The boil pH should be...
