I want to try create an old school Nordic style I had once from a farmhouse. Which used Vienna, rye and home smoked malt, house culture of yeast but from a dubbel abbey ale.

I don't think BIAB is an inferior style just a different way of doing things.
You will most likely need to mention the BiAB in your write up if the judges require the process breakdown as well.
I have seen a BIAB win a homebrew competition before so best of luck and have fun brewing.
Try starting with a more "known" ingredient one that people have been using in cooking or preparing food for some time that have "known" results. Like try a szechuan pepper blond or something like that you might find better results, but I'm sure with some tweaking and some entertaining results...
Hey mate, kudos to the thought process don't worry your not the only one who has tried this some have failed and some have had huge success.

Jaffa Stout - using jaffas obviously.
