Brewing since 2012... mead focused since 2020, not very long but multiple batch experience. I keep it simple; honey, water and yeast! I add other ingredients after primary fermentation.
I use honey from my backyard (other people tend to the hives). I volunteer at a "food pantry" (a whole different subject), where I get fruits and spices that may otherwise be discarded. But I do have a large garden that I pick from. My uncle makes beer, older brother makes cider, and I make mead.
