The oyster beer didn't have oysters in it, no idea about the name. They used a ton of anise or whatever licorice comes from and it actually gave me a stomach ache!

The dimmer is targeted to handle 120V so you may find that the adjustment is 10X coarser than you want it to be.
Judging from the size of the transformer in your picture, you're going to need a bigger transformer. A 10amps@12vdc transformer is BIG. You should probably take a look at how much switch current will be pulled from your transformer. Your filter caps will take most of the switch current but...

I think DavidR probably has the coolest looking cooler I've seen on this forum... That thing is ridiculous. How turbulent can you keep the coolant?
