Isn't the freezing process to make sure it's clear and no sediment is in the bottle? As a home brewer I don't know that it would make a huge difference but maybe I'm wrong. Definitely following along to see where this goes.
So I'm attempting the cream ale recipe from the book Brewing classic styles. It calls for 1.7 lbs of Rice Syrup but the only thing my LHBS had was Rice Syrup solids. Anyone know a conversion? I'm guessing an equal amount of solids would be too much. Also the recipe says 3.3 lbs of Pilsner LME...
Yup it was a full 2 week ferment. I have them in a big plastic tub so we shall see. It was 70 when i brewed and then it snowed a week later so i think it might have stalled the fermentation a bit.

So of course I forgot to take a measurement before adding bottling sugar. My FG with the 5oz sugar mixed in was 1.020. It was an extract kit for a Brown ale that said 1.010-1.014 for FG. My question is am I looking at beers that are going to explode due to a high FG? I think my fermentation must...
Did you try adding more DME? I didn't have the boil off I usually have and my English Pale Ale was a little off of OG. I poured off about a half gallon after mixing and added yeast as normal. It's been 3 days so I'm wondering if it would be too late to add more to it or if I should just leave...
