    After looking over the Pale Ale description again, that does sound like the best option. I think that it's not quite different enough to throw into the 23a and the wheat character is light enough that it could slide into the Pale Ale category. Thank you both for your input!

    That sounds like a good description, however I don't believe BJCP has a style by that name. I'm leaning towards American Wheat but the wheat in my recipe is such a low percentage of the total grain bill that I'm not sure how well it qualifies.

    Correct, that white leaf thing is not part of the bag. Like I said, it's on the bottom as well. It's a new better bottle and I washed it as thoroughly as I could and sanitized it as well. I'll see if I can get a better picture, but it's only visible from the side since it's not floating on top.

I think my problem with the Mr Malty calculator was trying to figure out what to choose for the yeast concentration and non yeast percentage.     Yes, I am brewing 5 gallons worth. So, 3 quarts is just under 3 liters. That's a pretty big starter isn't it? How much DME should I use in a starter that big? 1.25 cups or so?
