    Chimay Grande Réserve (Blue)

My favorite recipe! Took second place in the first round of judging in the American Homebrew Association National Competition.

Belgian Dark Strong Ale Westvleteren 12 Clone - Multiple Award Winner

Despite pitching 1 trillion cells and adding 700 ml of captured slurry back into the fermenter it stalled at 1.018. I propagated more yeast and pitched it and it's been bubbling for three days now. I'll take a gravity reading today and see where it is. The lessons learned are plenty of head...

    Tig Welded Krausen Capture Device

Yes it is! I emptied the krausen capture jar twice for a total of 600ml of slurry back into the fermenter. The blue blowoff bucket had a half inch of slurry on the bottom. I'm going to try a larger cantainer on the next big Belgian.

14 Gallon SS Brewtech Cronical with an 11 gallon batch.

I collected 300 ml of slurry from the krausen capture jar and added it back to the fermenter. Next time I will use a larger container.

Just brewed my second batch of this and I'm hoping I solved my attenuation issue from my first batch. I started yeast banking and stepped up 1,000 billion cells of Wyeast 3787 from a slant for an 11 gallon batch. The second day of fermentation has been very aggressive and I had a chance to try...

    Tig Welded Krausen Capture Device

Finally brewed the Westvleteren 12 again. This time it was 12 gallons in a 14 gallon conical. The yeast was stepped up from a slant and the first day of fermentation has been very aggressive. The krausen capture device works but I need a larger jar.

    Stuck Belgian Quad?

I don't think it fully attenuated. I has a sweetness to it that lingers but its still a good beer. I'm going to let it age for a year and see if it gets better.

    Tig Welded Krausen Capture Device

That sounds like it would work. You could probably use the stainless lids that eco jarz sells. They are very thin gauge. One issue with the 16 gauge plate I used is the combined thickness with the silicone gasket. The stainless ring from eco jarz is deeper than the standard mason jar rings, and...

Belgian Dark Strong Ale Westvleteren 12 Clone - Multiple Award Winner

This beer is the best Belgian I have brewed to date. I'm looking forward to it aging for while and entering it into competitions next year. It will be difficult holding on to it for that long but everyone says it gets better. Thanks again CSI for doing the research and posting the recipe. I...

    Tig Welded Krausen Capture Device

The inspiration for this goes to CSI's Westvleteren 12 thread and the explosive fermentation I had. I had 5.5 gallons in a 14 gallon conical and the krausen climbed all that head space and went into the blowoff jar. There was a half inch of yeast in the blowoff jar after high krausen...

Belgian Dark Strong Ale Westvleteren 12 Clone - Multiple Award Winner

So I racked this recipe to a keg yesterday and I'm going to try force carbinating it. I could always bottle and prime if it doesn't work. I'm impressed with Wyeast 3787. I put six gallons in a fourteen gallon conical an the krausen still blew out the top with eight gallons of head space. I...

Belgian Dark Strong Ale Westvleteren 12 Clone - Multiple Award Winner

Thank you CSI for posting this recipe and taking the time to brew several test batches. I brewed six gallons on September 5th and had and OG of 1.094. I pitched at 63° F and increased the temperature 2.2° F degrees per day and it's currently sitting at 80° F. Gravity two days ago was 1.020 and...

    Stuck Belgian Quad?

Flars. I forgot to mention that I mashed at 148 with a PID controlled herms coil. I gave the conical a good shake tonight and increased the temp to 75. I'll raise the temp for few days and see what happens. Any suggestions if there's no change in gravity after a week? The recipe calls for...

    Stuck Belgian Quad?

Thanks for the reply Phil. This is my second brew in a conical. Maybe I can slosh the fermenter back and forth to stir up some yeast. Have you ever tried injecting CO2 in the bottom of a conical to stir up the yeast? I'll turn up the temp controller to 75 as well. I was trying to avoid fusel...
