Absolutely, I'd say that you have a little north of 100B cells there. I've had great success with even less than that. I always build a starter though. I'd seal it tight with a canning lid and put it in the refrigerator. That will keep for several months.

The fun thing about harvest Ale's is that you never really know for sure. I've had luck with about 7-8oz wet hops for the equivalent amount of traditional hops. Last years was great! Did this year's about 3 weeks ago, looking forward to tasting it.

Looks great to me! If you wanted to tweak something you could lose the crystal malt add Munich or just leave it out all together. However 6oz is a sensible amount. I also think that whirlpool hops add more bitterness than software indicates I'm working within my system to adjust my additions...
Got my Hansen in the mail today too. I was going to build a large starter and bank some yeast for another brew later. It's called Hansen blend so I assume it's a blend of a couple different strains. Does anyone see any issues with this strategy?

I vacuum seal in the original packaging. I put it in a little larger bag than needed and then I cut off a little piece of the bag each time I use them in a recipe. Then I re-seal in the same bag. This has worked great for me.
