    I'm drinking a stout I brewed awile back using Lavlin EC1118 Champagne yeast .Its dry ,hoppy and very high in alcohol but light unlike an Imperial.

    I have 1 lb of dried hibiscus flowers and 10 lbs of honey. What else could I add to the depth of flavor . I have 6 lbs of mixed berrys and I do like the Celestial Seasonings Wild Berry Zinger tea.

    I like using a lot of honey .I feed fermentations by adding doses of slightly diluted honey . Regularly feeding your fermentation breeds strains of higher alcohol tolerant yeasts.

    Boil a quart of water then add 4 to 7 lbs of Honey then add to fermenter. Alcohol will come up nicely.

    Yup , And PET bottles also serve a s a wort chiller . Freeze water solid and dip it in a bucket of 1 step and rinse before setting it into the wort.

    Rule #1 Use food grade everything ( ROPAK buckets are food grade) I'm not familiar with other brands but that what they sell at my local brewing supplier.

    I use several honeys in mead . When alone it has a distinct flavor or with other fruits or spices .But in a honey beer or a Braggot the malts and hops overwhelm everything.
