The hardest thing will be deciding where to put these. You would think after a couple of months waiting I would have that dialed in.... nope.
I have an update... Beer only came down to 1.018 so I went ahead and bottled it on Christmas.
Holy cow this IS a do over beer for me. Best beer I've made so far.

I had to do my last batch with the lid partially on.... not to keep the evap under control but to keep junk from dripping back into my wort.
My house exhaust was not strong enough to handle the boil off and my vent began dripping like rain.
I'm about to try that beer this weekend.

I brought this inside and I'm seeing airlock activity again.
I have little spots of bubbles all over the surface.
In a couple more days I will take another hydrometer reading and decide what to do.

This is my second full size batch. I think Santa is getting me a big 10gal cooler to mash in :mug:
I made a batch of Carabu Slobber about a month ago.
It went in while it was still warm out.
It began fermenting right away... vigorously.
Then it got cold out and I caught my fermentation chamber down to about 58.
It has had yeast floating as a thin layer on the top with a tiny amount...
I bottled this beer last Thursday.
I learned another lesson.... clean a few extra bottles.

My limit seems to be about 4 gal with the pot I have.
I have to spin the pot to keep the boil rolling nice.
