    HeadSpace for Wyeast 3068

    If you are using a blow off tube then you have no prob with 3068. ....you might want to consider a $12 6 gal ale pale. Seems like a hassle to mess with a 2 gal bucket and 2 one gallon jugs.

    Blow off

    Yes, you can leave your blow off tube hooked up until you are ready to bottle. I personally switch to an airlock (even though there is a small risk of infection in the process) for aesthetic reasons. I don't like looking a big gunky tube coming out of my fermentor.

    My guess is that your recipe was for a two or two and a half gallon batch and you made five gallons. It would explain the low og. Most "kit and kilo" recipes are small batches.
