Thanks for the responses. I suppose k-meta and sorbate will not stop an active ferment (never tried it, but see your reasoning). However, if I can get them to go dormant in the cold, then i should be able to get the fermentation to stop for good on the same basis that you add those two before...

I bet a few of you are scratching your heads at the title of this post, considering most problems with Wyeast 4184 are that you either can't start it, or you get stuck fermentations. Well, I have the opposite problem, and I want it to stop fermenting. I started this mead with SG=1.102...

Going to whip up a batch of this tonight. Too late in the season for Cuties clementines (only see mandarin variety out there now), but the store did have Darling Clementines so I'm hoping that will works as a close substitute. Time will tell. Is there any reason to NOT use more than 12...

Update: Finally got my pee to clear recently. Picked up some sparkolloid at the LHBS last weekend and now she's all sparkly clear. That's some pretty good stuff (the sparkolloid that is). Cleared up within a couple days. Went ahead and racked it Sunday and will give it another week or so to see...

For anyone that's done both this and Skeeter Pee, what is the difference between the two? Do you have a preference of one over the other? They seem so similar I'm wondering if it's worth the effort to try this recipe when I'm already working on a Skeeter Pee.

Finally made it through all 94 pages.....do I get a prize? :fro: I started a batch of SP back on 8/22, before finding this thread. Figured I'd give my method in case anyone cares: I only have 3 gallon carboys so I scaled the recipe down to a smaller batch. I didn't have any yeast energizer...
