I decided to oak it with a medium-plus French Oak spiral. I cleared with isinglass and multiple rackings. Tasting AWESOME!!

    Alabama Scuppernong 2013

My Scuppernong wine has cleared brilliantly and has been stabilized and is ready for bulk aging. I used a medium toast French oak powder in the primary fermentation. My question is: should I age it on oak spirals?? It finished out very dry and I am not going to back-sweeten it. It taste like a...

    Corker Damaging Corks

I had that problem with some "old, cheaper" corks that was gave to me, but when I bought some high end new corks the problem was solved! I just dip them in B-brite no rinse sanitizer right before I cork em'.

What's with head space in wine?

Yes you could, but you can also sterilize some glass marbles and use them to fill the volume of liquid to the top of your carboy(secondary)! PS. Those flat glass decorative marbles found at hobby stores are better than the round ones, They dont roll around disturbing the lees when jiggled!

What's with head space in wine?

Look at it this way: If a 5 gallon carboy is 20” across, the radius would be 10”. 10” X’s itself is 100”. 100” x’s pi (3.14)=314 square inches. Now look at the neck of the carboy, let’s say it is 2”. That would make the radius 1”. 1” x’s itself is 1. 1 x 3.14 is: 3.14 square inches...

Skeeter Pee - Starting with Dry Yeast

On the skeeterpee.com website it says that most folks use Kool-Aid. 2 packs per gallon if I remember right. Is that what you used??? I read where some back sweetened and use regular unsweetened Kool-aid and some used the sugar included and it flavored and sweetened at the same time. Some even...

    White wine storage temp.

Jon, I have just racked and added clarifiers to my Piesporter (Vino del Vida) and was amazed at the taste after only 14 days in the primary. The next morning it was crystal clear! I have made many Meads, Ciders and homemade fruit and muscadine wines but this is my first "kit" wine. So far I am...

What should a dry mead taste like?

It sounds like your Mead is right on schedule. All my meads have tasted awful at 6-10 weeks. It is going to BLOW your mind how it tastes in 6 months, then it will blow your mind at how it taste after it bottle ages for another 6 months. It is absolutely amazing at how it changes over time!
