    Over carbed irish red ale

Not sure I can help much with the current brew, but for future beers: I use norther brewers priming sugar calculator. http://www.northernbrewer.com/priming-sugar-calculator/ It says you should have used 3.7oz of priming sugar. I will confess though that I usually put a little more the...

Can I Brew in a bag?

indymedic, check out the 3 gal BIAB kits from Northern Brewer: http://www.northernbrewer.com/shop/brewing/recipe-kits/all-grain-biab-kits I have a 7.5 Gal kettle, so this is what I've started with until I can get a larger 15 Gal kettle. I've done 2 of their Irish Red 3 gal BIAB kits so far...

    Man, I love Apfelwein

Thanks jamesbsmith, that's a handy little spreadsheet. I do have an empty 1 gal I can use so I'll give that a shot and see how they turn out with different acidity levels (and I'll know what not to do next time).

    Man, I love Apfelwein

well, I'm a little impatient and I had already mixed up the juice and pitched the yeast before I saw your reply...so hopefully .79% isn't too high when it's all done. How are you estimating that acidity (trying to learn). I might split the batch and just sweeten half of it. I'll drink it...

    Man, I love Apfelwein

How "late" do you add the tins of fruit? I'm thinking a week, let primary fermentation slow down then add fruit? I started with 4.5gal of Apple Juice + 1gal of White Grape and Mangrove Jack's M02. I'm going to add 4 x 15oz cans of peaches (no sugar added) and 2 x 15oz cans of apricots (no...

    Water Report questions

The water softener I'm looking at claims to remove up to 12ppm iron from water (Whirlpool WHES44 if anyone has experience with that model). I don't necessarily want to lose the calcium and magnesium, but I don't want my hot water tank, showers, washer, etc to scale up from the hard water either...

    Water Report questions

Thanks UncleLeon, I've been doing some reading and thought I might have to add Gypsum, Baking Soda, and/or Table Salt to my water depending on they type of beer I'm making. I think I'm going to start with a basic Irish Red ale with no changes/additions to the water and see what I get. I'll...

    Water Report questions

I just got my water report for my new house. :mug: It’s well water, I was on city water before and never paid much attention to the water quality as it was decent water and I was brewing all extract kits. I haven’t brewed in almost a year while we were building the house and this time I want to...
