    Excess foam

    I recently brewed a Bohemian Pilsner. I naturally carbonated it with priming sugar then put it in the keggerator. I currently have it set at about 11 psi, but every time I try to serve it I get mostly foam. I tried to turn the pressure down to five PSI and had the same results. Any ideas?

    Bottle Priming With DME??

    I bottled the first batch I ever made with DME, and it worked better than any of the other batches I've made yet. It was a black lager, and if anything it was a little over carbonated. The wheat DME gave it a great, lasting head and really complemented the brew well.

    Tomorrow will be the 7 day mark for primary fermentation. Do I need to take a gravity reading to determine when to raise the temp for D-rest, or am I safe waiting until the krausen falls back in?
