Tonight I drank a bottle of Schneiders Dopplebock beer (nice stuff) and noticed that there was yeast sediment in the bottom. Of course, the light went on and I thought: what about culturing the yeast and using it in some home brew? Can this be done? Any thoughts?

Thank you for the input. I have read alot about mead and the information is sometimes conflicting. It sounds like the sweet mead yeast may do the trick. I would like to avoid using sulphites and other chemicals if possible.
