    Extracts are just wort that's been boiled down/condensed. There is no mash down on brew day. You start by boiling. Mashing a day (or more) before, then storing that wort (not on the grain) would eliminate the mash on brew day and you jump straight to the boil. That is why I was saying...

    As long as you are not mashing overnight I don't see anything wrong with it. Just drain into your boil kettle, off the grains, and put the lid on and you should be fine for a day or so. Really, it's not all that different then using extracts.

    I also have a Catalyst, but do BIAB not extract. I let mine sit for two weeks before I dump the trub, but I also transfer through a strainer to try to filter/aerate a little. I would try to keep the trub dumping to a minimum. It will settle and compact, the stuff in there after an hour or so...

    Gushers will either be infections or continued fermentation. I generally don't bottle earlier then 4 weeks. I don't even check gravity for two weeks. Well...I got a Tilt for Christmas so now I check gravity all the time, but I don't have to open the fermenter to do it. Worse case scenario...

    AG or BIAB?

    I BIAB, I have a 9 gallon SS Bayou Classic pot and that is good for a 5 gallon batch with about 14 lbs of grain...but it is full to rim.     I would ignore it for a week or so, then see where you are at. Three days is a little early to worry about a stalled fermentation.
