First gruit - Worried its not bitter enough.

As a side note, I've tasted a few gruits and I've really enjoyed them so far, including a couple I don't recall exactly from the Great American Beer Festival last year and the New Belgium one from their Lips of Faith series.

First gruit - Worried its not bitter enough.

I am trying my first go at a gruit. I made 1.75 gallons and used Briess CBW Munich LME as my base and steeped 4 oz of 40L crystal. I did not use any hops but used .35 oz of mugwort at 60 minutes, .30 oz of mugwort at 30 minutes, along with maybe a quarter teaspoon of wormwood, then .10 or so...

    Kombucha taste

I don't think it has an overtly tea flavor. It's a bit vinegary but the carbonation and sweetness makes it seem much less so. I've made it at home and that can turn out much, much more vinegar-like than the commercial stuff usually is. I really like the GT Synergy drinks. Strawberry or original...

A few issues with a Breakfast Stout clone

Just bottled this weekend and I really did end up at 1.030. I went ahead and primed and bottled per usual because the SG hasn't moved in 4 weeks. It'll just be a bit on the sweet side, right? :p So far it tastes fine.

Fast Head dissipation in my stout

I found this to be interesting (found this link from elsewhere on HBT): http://www.maltosefalcons.com/tech/cacao-nib-extract-drew-way Then you get the cocoa flavor without the fat. I did this and haven't seen how the batch came out yet, but I made enough extra to have some on hand to add to...

    Gunslinger's Graff with crabapples

A month has passed and they have gotten a lot better! Still not perfect. Gonna wait another month, but I'm satisfied where they are at now (very drinkable, wouldn't reproduce though unless they get better yet).

My beer is super flat 100% of the time! Losing my sanity!

Just out of curiosity, how full are filling the bottles before capping? How much headspace is there?

A few issues with a Breakfast Stout clone

Thank you for the detailed reply!! For the CO2 issue, I boiled a small amount of water with a little less than an ounce of sugar for 10 minutes, let that cool, and dumped it in. I did bump up the temp a little bit. Now to wait and see what happens over the next few weeks (unless someone has any...

A few issues with a Breakfast Stout clone

I do small batch (this was 1.5 gallon) BIAB all grain. This is only my 4th brew. Brew day went pretty well and I overshot my OG a little, ending up with 1.5 gallons at 1.092. I used this recipe: https://www.homebrewtalk.com/f68/founders-breakfast-stout-clone-139078/ I did use the recipe's...

Using Vodka For Cacao Nibs - How Much Is Enough / Too Much?

Thanks for the response! Lot's of good info. I'll feel more comfortable when I toss in the extract this weekend! :mug:

Using Vodka For Cacao Nibs - How Much Is Enough / Too Much?

Probably a silly question, but I'm making a tincture using the instructions on the site linked above (the "Drew Way"). He mentioned toasted cocoa nibs so, not knowing if mine were or not, I toasted them until they smelled nice and then dumped them and then the vodka on top in a mason jar. Will...

1 gallon batch at 1.070 with White Labs vial

Thanks both of you for the quick response! I'm using a different (dry) yeast and am good to go for the other batch, so I think I'll try mkyl428's suggestion and step up half the vial. If I'm not making a starter for tomorrow's one-gallon batch, when should I warm up (bring out of the...
