I am thinking of replacing my SS braid with a copper manifold. One foreseeable problem though: unlike some coolers, where the spigot seems to reside in trough below the bottom of the cooler, the spigot in my cooler is about 1 inch above the base of the cooler.

I've only done about six brews -- 3 extract and 3 partial mash, but I would agree with the sentiment. Everyone whose lips have come in contact with what I've made so far has been very happy -- if you are going AG because you think an extract or partial will be inferior you should reconsider.
Yep it was a partial boil. Probably had at most 4 gallons of water in the pot but boiled down to around 3. That combined with the uneven distribution sounds like a very plausible theory.

Yeah, sounds like I might have to invest in one or both of those options. The hydrometer is whatever the LHBS hands out with their kit, so it is likely of dubious quality.

I recently made a partial mash barleywine with the following as the grain bill:
10 lbs. pale liquid extract
2.5 lbs 2 Row pale malt
.75 lbs 60L crystal
.5 lbs aromatic malt
.5 lbs cara-pils
2 lbs turbinado sugar (ok this isn't really grain but it adds to the OG)
