    Thanks, when I think about it I've been brewing in a tea jar with a spigot on the bottom, and when I bottle I've been running it straight from the bottom so the first probably has more yeast, right? This time I took my scoby out and stirred it first, so hopefully it will be more consistent.

    I like to use chopped fresh ginger to flavor my kombucha for a second ferment. THe jar I use (almost a gallon) makes 5 bottles.
