    Can I legally do this?

You should take this opportunity to talk to your state liquor board and find out what they think, that way you get the answer...one way or another, straight from the horses mouth, not from someone who "thinks" it'll be OK.

    Another Control Panel wiring question

I hear you on the costs, I'm planning my electric brewery, and it's pretty scary. As you mentioned, it would probably be slightly cheaper to just use a thermometer vs a PID for the mash tun. A third PID would make your control panel look more consistent, if that matters to you, and you would...

    Air conditioner thermostat

I don't know about the technical side, as I don't know which thermostat you are using, but before you start make sure the thermostat will allow you to go to a low enough temperature.

Salutations from Tacoma WA, The Great Northwest

I grew up not far away from Tacoma, in Poulsbo, about a half hour away. How much is it to cross the narrows these days? It keeps going up everytime I talk to someone back there... Welcome to the forums, looks like you are well on your way!

    Night Brewing. Worth risking bugs?

Just did a night brew on friday, started about 8pm, went until 12 or so. I brew outside with just a cooler mash tun and a brew kettle, so had some transferring between buckets going on. I live in florida, so the humidity was the worst part. Beer helps. No issues with bugs in the brew - the...

    Twist off Bottles

I know people have had success using them, and others - not so much. I was going to try using some, but made a good score on non-twist off's from craigslist. If you are going to try to use them, you might do some small test batches to make sure they are working. It would suck to wait 3+ weeks...

    Bar Build/Basement overhaul... Progress tracker

Sawzall would definitely work to get it out, but might be a bit destructive! ;) Maybe consider some sort of false panel on the front of thr bar (behind the freezer) so you could get to it/slide it out?

    Bar Build/Basement overhaul... Progress tracker

Awesome to see some progress, and the place already looks a million times better de-wood paneled. Are you going to leave a way to get access to/remove the freezer if something should happen to it?

    The Dark Tower/The Gunslinger

I like the first 4 as well, but then lost interest. My absolute favorite SK books are the Stand and the Eyes of the Dragon (both of which tie in the Dark Tower series, actually).

    Will my beer be ok?

Your beer is most likely going to be fine. The only real concern is how warm it really was when you pitched the yeast - but again, it's probably going to be fine. Taking a sample from the fermenter is how most people do it, so thats OK, just be sanitary. Don't worry about the "bubbles" so...
