Not just 'the best', but iconic of and unique to NY. It's a tough difference to see from the inside. Chinese food. Yes, NY has some truly excellent Chinese food. Better than most I've found elsewhere. But it's the duck sauce and mustard that really set it apart. You just don't see it anywhere...

    bagel hack

Let's not let this one fly by. Metro NYers know exactly what they have in bagels and pizza, but most have no idea how special a delicacy they have in the humble hard roll. Oh, what I'd give for a bacon, egg, and cheese, over medium, butter, pepper, no salt. Coffee, regular.

    bagel hack

I'm a born & raised NYer living in the diaspora for the last 20something years. My boss goes to NY twice a year and every time brings me a dozen. Purchased on her way to the airport, in my hands the next morning. A spritz and a toast is exactly how revive them.

Lions and oak trees are both carbon-based sponges full of water. They're both the same stuff, but clearly not the same thing.

    The Sun

As the photo above shows, you see the source, the sun. It's the radiation which is only revealed when it reflects off something into our eyes. A radio station (the sun) with its tower (source) is always visible. Its transmission (radiation) is only revealed (seen) when you have a radio...

    The Sun

Psst... light is radiation. The same stuff as x-rays and gamma rays, etc. Maybe your NASA employed friend is also an art history enthusiast? 'Light' as in the stuff Vermeer is famous for? True, that stuff is atmosphere being brought to luminescence by the sun's radiation. Still, it's the...

British Golden Ale Miraculix Best - Classic English Ale

FWIW, a batch with Saaz is proving to be perfectly enjoyable.

Lookkng for help with my recipe!

I understand sweet cherries turn into cough syrup, tart cherries make good mead. I've had excellent and very easy results using tart cherry juice in lieu of fresh fruit. A quart bottle of juice replaces the same volume of water per gallon in primary. Supposedly equivalent to ~3lbs of fruit per...

    to mash or steep?

That's a pretty weak proxy. A 30sec steep of strong black tea is a nicely dark insipid sip.
