have the Bell's 2 hearted clone from here in primary. its been fermenting for 3 1/2 weeks. dry hopped it last Friday or Saturday (notes at home, 1 oz centennial). was planning on bottling tonight but brew buddy can't make it. can I wait until Monday to bottle or should I go ahead?

Presenting Wears Creek Lemon Kolsch. My first brew. Extract. 2 weeks in primary. 2 weeks in bottle. Couldn't wait, had to try one. Probably darker than it should be though (boiled all the extract for the whole hour). A bit hazy.

Brewed this a couple weeks ago. Took a reading yesterday and its down to 1.011. Probably bottling on Monday. Sample was maybe a bit thin. Is this common? Will it fatten up conditioning in the bottle? I plan on about 3 weeks of conditioning. Want to have it in May for my birthday.
This is helpful y'all. I have a solution until I get the chamber built. Hoping I can get my old freezer out of the room its in. It's so old and big and heavy, the room was kinda built around it! If I can, it will become the fermentation chamber using the STC-1000 and we'll get an upright freezer...
Yeah. The genesis of this thread is deciding to buy/build some kind of fermentation chamber now or wait.
I may look into using a swamp cooler for the time being.
Cool. But if more craft brewers go to cans, it seems like it will get harder to find bottles for home brew.
