I have had mine in carboy for several months.
Ive had to repitch once.
Gravity is slowly moving however I have no hopes this will ever be done.
Im so dissappointed.
It tastes good just no detectable alcohol.
Not sure what to do at this point.
Yes I want a semi sweet/carb'd cider.
I have stove top past. before and it worked great.
I will wait for the newest fermentation to stop and take a gravity reading again.

So I racked the cider into a new carboy.
FO is 0 so this tells me its done right?
The alcohol content is definately there however I need to improve the taste.
I added 1 gallon of apple juice.

I did the bottle pasteurization once and out of 48 bottles I only had one blow....
all over the kitchen.
In another batch I killed off the yeast using said chemicals and backsweetened just a tad.
I find Im not fond of non carbonated...

The garage didnt get down that low (it was more in the 50's) and as luck would have it it DID ferment to 0!
I tasted each batch last night....definite alcohol!!

I had 40 gallons (8 - 5 gallons buckets) of cider fermenting in the garage.
It was too cold and the yeast didnt do anything.
Airlocks were quiet.
Its been three weeks and I finally had room to move all the primaries into the house.

Yes I knew the first one was more an apple wine....I just expected it to taste different!!!!!!
And yes I agree next time I will not use powdered spice blends.
Im going to try to filter it out before bottling.

I have 40 gallons of fresh unfiltered apple cider so this weekend Im going to start 8 - 5 gallon batches of hard cider.
I want to add fresh pears that have been put through a blender to one five gallon batch.
Im hoping some of the pear flavor will come through?
