The shop is an hour and a half drive away. It'd cost me more to drive down to return it than the price I paid for the grain.
I think I'm going to try to make a 3-4 gallon RIS with first runnings and small stout with the second runnings and call it Oops It's a Stout
So I was gonna grab some grain to brew up a mild and rounded all the specialty grains up to one pound each. I didn't specify this to the guy at the shop and realized too late all the specialty grains got thrown in one bag. So as it stands I have a bag with the following:

Brewing this beer tomorrow as my first all grain batch. I added an additional pound of 2 row as I don't know what my efficiency % will be yet. Seemed like a simple enough beer and will be a perfect summer beer by the sounds of it.
I plan on brewing my first big beer soon, wanting a little feedback on how to go about it.
Anticipated OG 1.102 and I'll be using yeast slurry from a saison brewed with Belle Saison.
1. Can Belle Saison tolerate 11-13% alcohol?
2. Is yeast nutrient/energizer recommended as there'll be...
New to brewing, only done about about a dozen brews so far. Doing extract w/ specialty grain for now but I help another all grain brewer on occasion.

Sampling some growlers of Blue Pants Brewery's Oktoberfest and Pale ale. Also bought a bomber of their Peanut Butter Stout but haven't cracked it open yet.
