missed SG by 8 points - 56% efficiency - ugh

So I brewed a Rye today and I had some serious temp. and gravity issues. I figured they're related, but I wanted to see if anyone had any advice. Recently purchased two Blichman Brewmometers fromm Northernbrewer.com, one for the kettle, one for the MLT (a cooler). I calibrated them in the...

    Wyeast 3711 French Saison

We were well under 77 for the first week of fermentation (when I imagine the majority of the fermentation occured), but for the last two weeks in primary it was in my apt where outside heat was peaking in high 90s. My Fermometer is broken, so I can't say what the actual temp of carboys was. I...

    Wyeast 3711 French Saison

We transferred from primary to secondary on Sunday, and took our first sample, the gravity was 1.001 (OG was 1.055), I didn't even think that was really possible, this yeast is incredible. As for the high fermenting temp, the samples we tried from our two carboys were both good, we didn't...

    Wyeast 3711 French Saison

Brewed with 3711 about 2 weeks ago (8/1). We made a Liter starter out of one smack pack and split that between two carboys for our 10 gallon batch. With in 12 hours they were both bubblin like mad. One of the fermenters had a thick krausen, the other no krausen at all, we were worried, but...

Keg as conditioning vessel / secondary

I visited a fellow homebrewers set up, and he showed me his Black Saison in secondary, in a corny keg. He had a blow off tube set up. Is an airlock/blow off necessary for using a corny/sixtel for a secondary?

    Weissbier German Weissbier

I made this beer, but left the watermelon juice out. It turned out good, not a perfect wheat, but only my 3rd batch. I'd like to make a hopped up wheat, like the Brooklyner - Schneider. Any ideas?

Is it possible to replenish lost wort in primary?

Thanks guys, 4 gallons of dope beer it is, I figured as much, but I wanted to double check.

Is it possible to replenish lost wort in primary?

My friend and I brewed on Sunday. An AHS Double IPA, 10# LME + 1# corn sugar, pitched onto our previous brews yeast cake. SG 1.080+. Monday AM I woke up to find a Carboy Volcano, beer on the ceiling even. It's the next day, and it's still bubbling away, I'm not worried about the beer, but it...

    Temperature of Secondary?

I'm moving a wheat beer to a secondary tomorrow, to make room for a new brew in my carboy. (The reason I have to move the beer is I'm planning on reusing the yeast cake.) Problem is, summer in Brooklyn is hot, and my apt. is hot. I've been using the swamp cooler approach for this wheat, and...

What's up with THIS photo - never saw THAT before

I was wondering about his for extract brewing - is it ok to cool the dilution water, like Grinder did, to get to a lower pitching temp faster? My friend and I are doing extract brews, usually 2.5 gallon brews. can we add cold water to the carboy and then pitch yeast?

How do I take a hydrometer reading during fermentation?

The recipe gives an OG of 1.035-1.045. We took a reading on Sunday and we got 1.04. And it tasted GOOD. I'm relaxed. Thanks for the advice folks, I'm so anxious to drink my OWN beer, I think I over analyzed our whole process. These forums are definitely helping me follow the #1 rule.

How do I take a hydrometer reading during fermentation?

My friend and I brewed for our first time last night. We used a True Brew IPA kit. Everything went well, but we didn't take a hydrometer reading prior to sealing it up in the fermenter. The bucket's in the basement bubbling away. Should we pop the top and take a reading? Is there any...
