I bought a wilser bag and it works great! My false bottom broke which dropped the bag on top of my heating element and it burned a few small holes in my bag. Wilser let me send it back and fixed it, even though not his fault, and let me order a backup at a discount. Huge +1 for him. Great...
That's a great idea. It's difficult for me to try new yeast given the amount of time (and some $ investment) to possibly make something I like less or worse hate! A tasting night with same wort but different yeasts would be a great way to broaden our horizons.
I've not tried this but I can say with a 20 gal pot the difference in me brewing a 5 gal batch vs 10 gal is < 20 mins of extra time to double the batch. If you had limited space to ferment you could easily brew a larger batch all at once then ferment the 2nd half as soon as you finished...
Although the amazon route seems easiest, I must say I'm curious what your results are if you decide to create your own scoby. Please update if you do :)

Without details it is difficult to offer good advice, but I too moved from extract to all grain and had a few issues along the way...but it is doable.
