I always cold crash. The gelatin isn’t going to clear it all the way. So in my opinion there is no need to fine it.

My regimen is 24hrs on the stir plate. I then stir it up, harvest half for another time and cold crash.

Looks great to me! I'm about to brew an Irish red. I'm not doing it, but you always could add some sugar to give it a little bit of a dry taste. Looks like a good recipe to me!
