Loved this recipe. The first batch we brewed stayed 15 or 16 days in the primary (I have to admit, we didn't take very good notes). The second, I racked to a secondary after only 8 days because of a distinct yeast flavor that I didn't care for in the original batch. Just from gravity...
I didn't notice either batch being too sour but I used fresh pressed cider for both batches. The first, pear, the second, apple. That may have made a difference.
Your timing is impeccable! My husband and I are gearing up for our next run. We'll use an Amber Ale recipe for two simultaneous batches and ferment one normally and the other in the CA Common style so we can compare the differences side by side. This recipe looks like a good base for that...
We're going to try this as our next recipe but are still pretty new to brewing. Please clarify, the 60 minute boil is for the grains only (the mash), right? Did you also add the sugar with the grains? Sorry if it's a silly Q, but brewing recipes are still a bit Greek to me.. Thanks!
I agree! I am still very new to all of this (this was my first brew) and I already want to play with it, but some other versions would help very much! I don't know why, but this particular form of brew is very uncommon... the dominantly cider based beer style brew.
I think it could stand to have a bit more hops added. We used only .5 oz. since we got our vines from a friend and have no idea what kind they are. Nice body and great flavor. On the dry side.
All in all, it was just what we were looking for (a way to brew our cider like a beer). Will...
