Intentionally stressing the yeast - looking for advice

I had never underpitched before (on purpose,) before this year. I recently brewed a light bodied Belgian style Wit and wanted some clove, banana, bubble gum type flavors to be present. I under pitched by 50% and also kept the beer much warmer than I usually do, and insulated the carboy. It...

Anybody Remember Colt 45 Malt Liquor?

To answer you directly, I have never seen a recipe for it. Indirectly, I will say that I took a swig of it once and it tasted like an armpit. /cheers

    What’s wrong with her?!

When we first met, my wife didn't like beer. She only drank whisk(e)y and 7up once in awhile. At first, she just sort of put up with (I guess) my hobby. But as I started to get better at brewing, she started enjoying the beers and discussion around the beers styles etc...or maybe she's just...

What superstitions have snuck their way into your brewday?

I always start my brews off listing to the Mardi Gras Mambo or They All Asked For You. While not a superstition, I believe that it starts the brew off with good vibes and definitely puts me in a better mood for the work to come. /cheers

    New Anvil Bucket Fermentors

Ok, so I've had my 4 gallon model for a few months. I'm on the third batch in it. I thought I would reply to my original post in this thread. After putting the fermenter together, upon closer inspection, I found a couple small specks of rust in the bottom. They did not clean out using...

My Budget was $200... That was a fail

As long as you are not suffering in other areas of your life for the money, why not spend it on something you enjoy doing? I long past the price point that I would ever recover the money spent on brewing equipment with the amount of beer/wine that my wife and I drink. But you know what? I've...

Coffee Stout help! Too much coffee!

If you have already bottled, do not open them up. I would just taste one and allow them to age. The flavors will mellow with age. Opening them up just risks making the batch worse. You may find that you don't like the flavor now, but after they sit for a few months, you love it. I commonly...

I am getting ready to purchase a new controller for my chest freezer. I was going to buy a Johnson Controls, but saw this ad. For the 50% off code I would post an Amazon review. Thanks.

Help me put together a cherry ale recipe?

I guess it depends on what flavor profile you want. If you want it clean and dry, I would add pure cherry juice to the secondary. If you want it a little sweet, then I would add it at kegging/bottling time (and reduce the bottling sugar.) If you're set on using whole fruit, I would wash and...
