    Fermented for 2 weeks with WLP566 at 68-70. The characteristics say it's medium flocculation, looks like more than medium to me though

    Just wondering if anyone thinks this might be infected. Smells fine and has the typical color of yeast. I just don't think I've ever seen that amount of material floating post fermentation.

    Bottling muscadine wine in mason jars?

    For one, I don't have a corker and don't plan on buying one. Two, I think it would be cool to package homemade wine in mason jars, adding to the novelty of it.

    How about filling the jars? Should you fill them to the brim to minimize oxygen exposure? I have about 4 gallons of Mustang Grape wine that will be rerady to bottle in December and I also plan on using Mason jars.

    Ok ok you've convinced me to try skipping the secondary: questions

    I have dry-hopped in the primary with no problems. Of course, pitch 'em at the end of primary fermentation and leave for 5-7 days as Yooper stated. I don't secondary anymore unless I am brewing a big Belgian or lagering.

    Topping off after racking

    I'm confused with this whole top off thing. Why wouldn't you simply squeeze the fruit and put everything into the secondary?

    How long should pellet hops last?

    I have some Simcoe hops that have been in the freezer about 1.5 years. The package was opened initially and then folded over and taped down, not air tight. Should they be ok or should I replace them?

    Just picked 4.5 gallons of Mustangs yesterday. Looking at Keller's recipes, I'm having trouble determining the yield for the recipes, primarily the first one. Also, what should the OG be?
