i am hopefully making a clone of the B Nektar “Black Fang” with blackberries , Orange zest and Cloves. My question is how much blackberry purée should I use for 5 gallons? I was thinking two 3lb cans of the Vintner’s Harvest purée. Is that too much or not enough or about right?

Vintner’s Harvest purée vs Amoretti craft purée... has anyone had experience with both of these purées? Which is better? I will be splitting a 5 gallon batch and make 2.5 gal of Blackberry and 2.5 gal of Rapberry. Probably will be using a whole 3lb can for each or half a bottle of the Amoretti...

Wouldn’t Open top fermentation work? Maybe .. gauze over the top..no pressure as long as the sides of the bucket are tall enough that’s how I do my Saison’s but it’s not the same monster yeast.

I have already kegged my Old Ale. I know it was under attenuated it came out at 10% but I was shooting for about 13.5-14% I used London Dry Ale yeast. it quit at 10% I have already kegged this beer thinking that I thought I would like it a bit sweet. However I am now thinking it is too sweet...

Thank you Jewrican, I had it the opposite way. I rotated it 90 degrees and have the output pointed straight up now. I will test it before my next brew day. I don't have a bleeder valve on the output. not sure what a bleeder valve is exactly. I do have the out going to a T with a ball valve on...
