For what it's worth, I emailed Pico support a while back with your question #2 and was told they will be expanding the options in the near future.

Just brewed Deaf Turtle this past weekend and missed the OG by 10 points. Pretty disappointed as I have yet to brew a solid IPA and this is my fifth attempt. I have been exchanging emails with support but waiting for hopefully some answer to my issues.

Any suggestion on how to get the current fitting out of the regulator?

I've started simply attaching the temp sticker with a couple pieces of scotch tape on either end. Holds just fine, even in my fermentation water bath and still gives a temp reading. By the way, lighter fluid works great to remove sticker residue :)
