    I want to use yeast rather than priming sugar for bottling

    If I were doing this, I would make a champagne starter with carefully measured "golden syrup", well oxygenated and fermenting stongly. I have never used a liquid champagne and am interested in your results if you could let us know! Good luck.

    I have bottled with Champagne yeast with success. I'm not sure if that's what you're after or not. It depends on the style and what you're going for, but a different yeast at bottling time can dry a beer out and give you neat bubbles.

    You can bottle directly out of a keg. Carbonation will mostly stay in suspension when everything is cold - beer should be 0 degrees, bottles too and do it in the garage in the north. It will be a bit of an issue if you are planning on aging the beer in the bottle, as you aren't replacing the air...

    I rack after 3-5 days based on hydrometer. I think there's a theory that you do not want to harvest your quickly-flocullating yeast that has fallen out of suspension in these first days.     Did you trim the dip tube a bit? If not, you may get a foamy pour off the bat with the sediment. Mmmm.

    You will definitely get better growth this year. Dig a big root ball around the plants and you'll be good. But even if you just got the minimum root ball, I'd say you will get way better growth this year than last.
