    Why did you get into this hobby?

    I did nothing to get into this hobby. My parents gave me a kit (minus the actual brew ingredients) to bottle a batch way back in 2000. I bought a DME kit a few days later and I've been going strong since.

    If you can decant all the yeast and pitch into an appropriate amount of dme, then use what you have. I would suggest visiting here for details (or another suitable online yeast calculator).

    I've used that strain multiple times with great success under varied conditions. A true workhorse.

    Agree with beergolf. My preferred style is Belgians and they do take quite a bit of time to finish; typically longer than the 'usual' style.

    I'm assuming you want to add dry malt extract to make up for a lack of efficiency in an ag batch. If that's the case, you'd add it to the boil. You need to be more specific in your question.

    irish moss

    I haven't used Irish Moss in my brews for well over six years. I brew ag batches and found that everything settles out within a few weeks. When I used to use it in 5 gallon batches, I think I used to use about one teaspoon, give or take, so you should be fine.

    Yeast starter

    1. Depends upon the 'freshness' of the yeast. In general, you should see something in, at most, 2 to 3 days. 2. You will know it's working if you see bubbles in the vessel that the yeast/starter is in. Don't rely on the airlock for indication. 3. Sounds like you plan on bumping this starter...
