This is my experience exactly. Th waiting is the hardest part but it is worth it. I am on my 15th brew now, and I wait a minimum of 3 weeks and then go to fridge with a test at three weeks and chill for a week. Higher abv beers can take longer. They always taste better at the three to four week...
I do both. Keg for hoppy beers. Bottles for darker beers. As mentioned in this thread, the keg weeks well for beers that don't age, like IPAs. I also dry hop in the keg typically. Stouts and black IPAs normally get bottled and remain in the cellar until a week before I want to drink them...
I'm about half way through audacity of hops. Good book. It is great fun to read about all the start ups and how they came to be. It is also amazing how supportive the brewing industry (craft brew) is. Amazing for so many breweries trying to gain market share to be so helpful to new brewers...
So update, now that it has had a week to sit the flavor has balanced out and the beer is less cloudy. I think it was a combination of not giving the dry hops enough time to diffuse into the beer and possibly the first few pints having some settled particles in them. The flavor now is amazing and...
I usually do the first dump between 3-5 days after the first signs of fermentation, assuming that at that time fermentation activity has already slowed. I have a 1.5" dump through a 1" valve and if you wait to long the yeast can clog the port easily. I have adapted to gently tapping the side of...
Up at 5 am this morning to begin an amarillo pale ale. Just waiting for my mash to finish before I stoke it up for the boil (BIAB).

I have tried mine a couple of times over the last few days and overall it is very good. I did half of the dry hopping in the fermenter and the second set is dry hopping in the keg. My latest sample had a very bitter taste to it. Aroma was awesome, flavor was good, but the finish was very hop...
So I am using 3" stainless tea balls to dry hop with pellets in my keg. I have two tea balls with about 1oz each in the keg. I threw them in (sanitized) to sink to the bottom.
My question, should I have used line to suspend them higher in the keg or is it ok that they are in the bottom? I...
Just racked to the keg yesterday. Added second set of dry hops (recipe has two rounds of dry hopping) to the keg. I'll let it sit for the week to carb up, chill, and dry hop. Next Friday will be first taste. It smells awesome and sample tasted great.

Ever since my daughter has been born I have moved to early morning brewing. I setup before bed the night before and measure out my strike water. 5 am the flame is lit and I am usually done and cleaned up as everyone is finishing breakfast. I am excited for the warm weather as this method is a...
Don't fear the foam. The suds are beneficial. Liquid should be dumped out but any remaining foam is ok and desirable. In larger vessels it is common to rack the beer right onto the foam and just let it get pushed out of the carboy/bucket as the beer fills in behind it. It is a no-rinse sanitized...
Have done several days of dumping yeast from my conical. Gravity is down to 1.020 and still dropping. The smell is amazing! I can't wait to dry hop and get this in the keg.
